discuss.tchnics.de is quite lenient when it comes to defederation, only defederating instances that host content illegal under German law (CP, Nazi shit) and blatant calls for violence (Nazi shit) or massive spamming. Based in Germany so somewhat decent privacy (still in the 14 eyes). Main languages are English and German, but others are permitted.
Keep in mind that Lemmy as a whole provides very little privacy, with any instance being able to log almost all activity.

For alerts I just have the server directly send email over SMTP to my address, no service needed. You could implement DKIM with such a setup if you wanted to.
You can connect to most instances over Tor, but hosting a server over a Tor hidden service would cause problems as it can’t be connected to by stock servers. (If you convince others to run other Tor hidden service instances, they could probably federate with each other)

Personally I really like the BeagleBone black (https://beagleboard.org/black), because it has integrated flash (no more rummaging for a micro SD card), and lets you ssh over USB. (no more debugging network connectivity, or searching for a unused monitor). It still can boot from a micro SD or USB drive, so if the flash breaks (or gets bricked) it’s easy fixable. The best part is no USB Mini-B connectors that break after ten uses. (Those things are cancer, they are absolutely awful and everywhere)
One thing to be aware of with them is the lack of on board WiFi, so if you need that make sure to get a USB WiFi radio.
